Another Mead

Latest batch of mead: a five-gallon batch, 15 pounds of honey. 4 tsp of acid blend.

Notes: the honey came from Ryan, sourced from a beekeeper local to him in New Bedford. Didn’t boil the wort, since I was using a local honey. Heated to 160 Fahrenheit – hopefully this will preserve some of the character. Still using the standard champagne yeast.
Looks like it’s responding well, we’ll see how soon the primary starts.
